Throughout the vineyards of Spain, from the beginning of the 2000s, a new generation of winegrowers set themselves the task of reconnecting with traditional viticulture – native grape varieties, no chemical treatments – for lively and authentic wines.
In the Utiel-Requena appellation area, Mariano Taberner works in a spirit that is both artisanal and innovative: a pioneer in organic farming in the province of Valencia, he has made his bodega Cueva - ten hectares, between 650 and 700 m above sea level – an emblematic estate rich in century-old vines where he crafts a wide range of original, sometimes experimental cuvées, all natural and without any additives.
