Since the early 2000s, sparkling wines have been on the rise, particularly natural sparkling wines – pet' nat' – full of fruity freshness and drinkability, produced by bottling grape must before end of fermentation, which then ends while retaining its carbon dioxide.
Pascal Potaire is unanimously considered one of its masters: after a career in various areas of Touraine, he created his own Domaine Les Capriades in 2004 in the heart of the Cher valley, joined in 2011 by his business partner Moses Gadouche, with the ambition to highlight the "ancestral method", when applied to the different Loire grape varieties, Chenin, Menu Pineau, Pineau d'Aunis, Pinot noir, and Gamay cultivated and vinified without any input or adjuvant. Natural sparkling wines with remarkable openness of juice and freshness, but also with a beautiful vinosity promising good aging potential.
