The Jura is today animated by a formidable generation of organic winegrowers who are rediscovering terroirs and expressions that enhance it like never before: on the remarkable terroir of Pupillin, an enthusiastic winegrower like Julien Mareschal is the perfect example.
The village of Pupillin, which adjoins Arbois (3 km to the south) and benefits from the special appellation Arbois-Pupillin, gladly gives itself the title of "capital of Ploussard" (or Poulsard) by highlighting the remarkable Côte de Feule, but it also offers, in particular, great terroirs for Chardonnay (Côte de Caillot). Julien Mareschal settled there in 2003 to create his Domaine de la Borde and gradually build up a 5.5 hectare vineyard on the region's steep hillsides made up of different types of marl - farmed entirely organically. His practices in the vineyard and in the cellar have only one ambition: to translate the terroir as accurately as possible through the grape varieties that make up the tradition of the Jura, that is to say the local grape varieties as well as Chardonnay and Pinot Noir. Frank, straight, direct wines, a perfect introduction to the wines of the Jura.
