Old vines of Assyrtiko – a large Mediterranean white grape variety typical of Santorini –, maceration for 12 hours with the skins, aging for 8 months on lees in vats. One of the last wines produced by Haridimos Hatzidakis. 

A white of great complexity mixing fruit (citrus) and floral notes with iodine and saline touches, at the same time rich, powerful and subtle, full and mineral: intense expression of the Santorini terroir.
