Around 85% Pinot Noir blended with Chardonnay from old vines grown on grey marl soils of the lieu-dit 'Les Nouvelles' in Arbois, fermented together in whole bunches. 

ULM stands for Ultra Long Maceration: 8 months to be precise, with a blend of red and white grapes, yielding a light red wine with a hint of reduction. After aeration, the nose shows more of it pinot aromas, and the mouthfeel is both fresh and taut.
