Pinot noir (around 85%) and chardonnay from old vines from the locality Les Nouvelles (gray marl soil) in the Arbois terroir, vinified together in whole bunches.

ULM translates to Ultra Long Maceration (8 months): it combines undestemmed red and white grapes and offers a light red, marked by a note of reduction which requires aeration to deliver a “pinotant” nose and a palate with both fresh and tight.
